Matcha, White Chocolate & Pistachio Madeleines

Today, I invite you to discover a recipe that subtly combines matcha, this vibrant green tea powder with delicate nuances, with homemade madeleines. These little treats strike the perfect balance between tradition and originality, ideal for a tea break or to delight your guests during an afternoon gathering. For an even more indulgent touch, I’ve added melting white chocolate pieces and crunchy pistachios, creating an irresistible combination of flavors. Get ready for a truly memorable taste experience!


Ingredients (makes about 20 madeleines):


• 2 organic eggs

• 85 g organic granulated sugar

• 7 g organic honey

• 7 g organic culinary-grade matcha

• 7 g organic premium matcha

• 1 pinch of salt

• 100 g organic T55 flour

• 3 g baking powder

• 85 g organic butter

• 20 Valrhona chocolate fèves (white chocolate pieces)

• A handful of shelled pistachios


Preparation Steps:

Melt the butter with the honey over low heat in a small saucepan. Let it cool.

Whisk the whole eggs with the sugar. Dilute the matcha with a little milk to form a smooth paste. Add it to the egg mixture and whisk well. Add the salt, flour, and baking powder, then mix until combined.

Finish by incorporating the cooled melted butter. Cover the batter directly with plastic wrap and refrigerate for at least 6 to 7 hours, ideally overnight. If you are short on time, place it in the freezer for about 1 hour.

The next day, butter and flour the madeleine molds. Place a generous teaspoon of batter into each mold and bake at 200°C (400°F) for 10 minutes.

Add chopped pistachios and one Valrhona chocolate fève into the center of each madeleine. Return the molds to the switched-off but still warm oven for 3 minutes.

Remove from the oven and gently turn each madeleine over so the rounded side is facing up. Place the molds in the refrigerator for at least 30 minutes to allow the madeleines to firm up.

Carefully unmold and enjoy with a hot green tea for an unforgettable gourmet break.
